- 1/4 cup lime juice (freshly squeezed)
- 1/3 cup olive oil
- 1 clove garlic
- 2 tablespoons Greek yogurt (or mayo)
- 1 teaspoon honey or maple syrup
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Add cilantro, lime juice, and garlic to a blender.
- Blend until roughly combined.
- Add olive oil and yogurt (or mayo).
- Blend until smooth and creamy.
- Add honey, salt, and pepper.
- Taste and adjust seasoning if needed.
- Pour into a jar and serve immediately or store.
Notes
- Add water to thin the dressing if needed.
- Adjust lime juice for more tanginess.
- Store in the fridge for up to 5 days.
