- ¼ cup fresh lime juice
- ⅓ cup olive oil
- 1 clove garlic
- ¼ cup Greek yogurt (or mayonnaise)
- 1–2 tsp honey (or maple syrup)
- ½ tsp salt
- ¼ tsp black pepper
- Optional: ½ jalapeño (for spice)
Instructions
- Add cilantro, lime juice, garlic, and Greek yogurt (or mayonnaise) to a blender.
- Blend until smooth and combined.
- Slowly drizzle in olive oil while blending to emulsify.
- Add honey, salt, and pepper.
- Blend again until creamy and smooth.
- Taste and adjust seasoning or lime juice as needed.
- Transfer to a jar and refrigerate until ready to use.
Notes
- Add water to thin the dressing if needed.
- Use fresh cilantro for best flavor.
- Adjust spice level by adding or omitting jalapeño.
