  • 1 cup black beans (drained and rinsed)

  • 1 cup corn kernels

  • ¼ cup red onion, sliced

  • ¼ cup jalapeños (optional)

  • 1 cup diced tomatoes or pico de gallo

  • 1 avocado, sliced or mashed

  • ¼ cup chopped cilantro

  • Sour cream or Greek yogurt (optional)

Instructions

  • Preheat oven to 375°F (190°C).

  • Spread tortilla chips evenly on a baking sheet.

  • Sprinkle black beans and corn over the chips.

  • Add bell peppers, onions, and jalapeños.

  • Evenly sprinkle cheese over the top.

  • Bake for 8–10 minutes until cheese is melted.

  • Remove from oven and top with tomatoes, avocado, and cilantro.
