2 large flour tortillas

1 cup cooked turkey, shredded or chopped

1 cup shredded cheese (cheddar or Monterey Jack)

2 tablespoons onion, finely chopped

1 clove garlic, minced

1 tablespoon olive oil or butter

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon chili flakes (optional)
Instructions

Heat olive oil in a skillet over medium heat.

Add chopped onions and cook for about 2 minutes until softened.

Stir in minced garlic and cook for 30 seconds.

Add shredded turkey to the skillet and season with salt and pepper.

Cook for 2–3 minutes until the turkey is heated through.

Remove the turkey mixture from the pan and set aside.

Place one tortilla in the skillet.

Sprinkle half of the shredded cheese evenly over the tortilla.

Add the turkey mixture on top of the cheese.

Sprinkle remaining cheese over the turkey.

Place the second tortilla on top.

Cook for 2–3 minutes until the bottom tortilla is golden and crispy.

Carefully flip the quesadilla and cook the other side for another 2–3 minutes.

Remove from the skillet and slice into wedges before serving.

Use freshly shredded cheese for better melting.

Avoid overfilling the quesadilla to make flipping easier.
