Ingredients

  • 3 cups ripe tomatoes (cherry, grape, or diced Roma)

  • 2 ripe avocados, diced

  • 1/4 cup red onion, finely diced

  • 2 tablespoons fresh basil or parsley, chopped

  • 3 tablespoons extra virgin olive oil

  • 2 tablespoons fresh lemon juice

  • 1/2 teaspoon salt (or to taste)

  • 1/4 teaspoon black pepper

  • Optional: 1/3 cup crumbled feta cheese

Instructions

  • Wash and dry the tomatoes. Slice or dice into bite-sized pieces.

  • Cut avocados in half, remove pit, and dice into cubes.

  • Finely dice the red onion.

  • In a large bowl, gently combine tomatoes, avocado, and red onion.

  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

  • Pour dressing over the salad and gently toss to combine.

  • Sprinkle fresh herbs on top.

  • Add feta cheese if using.

  • Serve immediately for best texture and flavor.

Notes

  • Use ripe but firm avocados to prevent mushiness.

  • Add dressing just before serving to keep salad fresh.

  • If making ahead, store tomatoes and dressing separately and add avocado last.
