3 cups ripe tomatoes (cherry, grape, or diced Roma)

2 ripe avocados, diced

1/4 cup red onion, finely diced

2 tablespoons fresh basil or parsley, chopped

3 tablespoons extra virgin olive oil

Instructions

Wash and dry the tomatoes. Slice or dice into bite-sized pieces.

Cut avocados in half, remove pit, and dice into cubes.

Finely dice the red onion.

In a large bowl, gently combine tomatoes, avocado, and red onion.

In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

Pour dressing over the salad and gently toss to combine.
