Ingredients

  • 2 large flour tortillas

  • 1 cup fresh spinach (roughly chopped)

  • ½ cup crumbled feta cheese

  • 1 tablespoon olive oil or butter

  • 1 clove garlic (minced)

  • 2 tablespoons chopped onions (optional)

  • 2 tablespoons diced tomatoes (optional)

  • Salt and black pepper to taste

Instructions

  • Heat olive oil in a skillet over medium heat.

  • Add minced garlic and chopped onions, and sauté for about 1 minute.

  • Add fresh spinach and cook until wilted (about 1–2 minutes).

  • Season with salt and pepper, then remove from heat.

  • Place one tortilla in the skillet over medium heat.

  • Sprinkle half of the feta cheese over the tortilla.

  • Add the sautéed spinach mixture evenly on top.

  • Sprinkle remaining feta cheese over the spinach.

  • Place the second tortilla on top or fold the tortilla in half.

  • Cook for 2–3 minutes until the tortilla becomes golden and crispy.

  • Flip carefully and cook the other side for another 2 minutes.

  • Remove from pan and let cool slightly.

  • Slice into wedges and serve warm.

Notes

  • Drain spinach well if using frozen spinach.

  • Use medium heat to prevent burning the tortilla.

  • Freshly crumbled feta gives the best flavor.
