Ingredients

2 large flour tortillas

1 cup fresh spinach (roughly chopped)

½ cup crumbled feta cheese

1 tablespoon olive oil or butter

1 clove garlic (minced)

2 tablespoons chopped onions (optional)

2 tablespoons diced tomatoes (optional)

Salt and black pepper to taste
Instructions

Heat olive oil in a skillet over medium heat.

Add minced garlic and chopped onions, and sauté for about 1 minute.

Add fresh spinach and cook until wilted (about 1–2 minutes).

Season with salt and pepper, then remove from heat.

Place one tortilla in the skillet over medium heat.

Sprinkle half of the feta cheese over the tortilla.

Add the sautéed spinach mixture evenly on top.

Sprinkle remaining feta cheese over the spinach.

Place the second tortilla on top or fold the tortilla in half.

Cook for 2–3 minutes until the tortilla becomes golden and crispy.

Flip carefully and cook the other side for another 2 minutes.

Remove from pan and let cool slightly.

Slice into wedges and serve warm.
Notes

Drain spinach well if using frozen spinach.

Use medium heat to prevent burning the tortilla.

Freshly crumbled feta gives the best flavor.
