4-1/2 cups yolk-free uncooked noodles

1/2 pound fresh sliced mushrooms

A large sliced onion

1 pound 90% lean ground beef

3 minced garlic cloves

1/4 teaspoon salt

A tablespoon of reduced-fat butter

2 tablespoons of all-purpose flour

2 tablespoons of tomato paste

1 cup reduced-fat sour cream

14-1/2 ounces of reduced-sodium beef broth

1/4 teaspoon pepper

Chopped fresh parsley for topping

Recipe

Cook the noodles. Meanwhile, cook the beef, onions, and mushrooms in a large saucepan on medium heat until meat is no longer pink. Add some garlic and cook for one more minute. Drain and shift to another container.

Melt butter in the same pan. Add all-purpose flour and keep stilling until it gets into a smooth paste. Gradually add beef broth and tomato paste and keep stirring until thickened, almost about 2 minutes.

In a cast-iron, over medium heat cook the beef until it is no longer pink. Break into crumbles and drain.

Add broth, tomatoes, garlic powder, salt, and chili powder, and bring them to boil. Add rice and peppers while stirring. Reduce the heat and cover with a lid, and keep cooking for 8 to 10 minutes until the liquid gets absorbed. Keep it covered until the cheese melts.
