Instructions

  1. Prepare Pistachios – If using whole pistachios (not paste), place the shelled pistachios in your blender first with about ¼ cup of the milk. Blend on high speed for 30-45 seconds until the pistachios are finely ground into almost a paste. This creates a smooth texture in your final shake. If using pistachio paste, skip this step and add the paste with other ingredients.
  2. Soften Ice Cream Slightly – Remove vanilla ice cream from the freezer and let it sit at room temperature for 3-5 minutes. It should be soft enough to scoop easily but still very cold and firm, not melting. This prevents straining your blender motor and ensures smooth blending.
  3. Add Remaining Ingredients – To the blender with the ground pistachios (or add all ingredients if using pistachio paste), add: the slightly softened vanilla ice cream, remaining milk (about ½ cup), honey or sugar, vanilla extract, rosewater if using, and a pinch of salt.
  4. Start Blending on Low – Secure the blender lid and start on the lowest speed setting for 10-15 seconds to break down the ice cream and begin combining everything. This prevents chunks from flying around and protects your motor.
  5. Increase to Medium-High Speed – Once ingredients start moving, gradually increase to medium-high speed. Blend for 30-45 seconds until the mixture is completely smooth, creamy, and uniformly pale green with no pistachio bits or ice cream chunks remaining. Use your blender’s tamper if you have one.
  6. Stop and Scrape Down Sides – Turn off the blender and use a spatula to scrape down any ingredients stuck to the sides. This ensures everything blends evenly and you don’t waste any of that precious pistachio goodness!
  7. Blend Again Briefly – Give it one more 10-15 second blend to ensure perfect smoothness and uniform color.
  8. Check Consistency – Your shake should be thick and creamy but still pourable – think soft-serve consistency. If it’s too thick and won’t blend, add 2-3 tablespoons more milk and pulse briefly. If it’s too thin, add another scoop of ice cream.
