Instructions

Wash and slice cucumbers into thin rounds or half-moons.

In a small bowl, whisk together peanut butter, sesame oil, soy sauce, rice vinegar, honey, garlic, and ginger until smooth.

Place cucumbers in a large mixing bowl.

Pour dressing over cucumbers and toss gently to coat.

Sprinkle sesame seeds, green onions, and red pepper flakes on top.
