Instructions

  • 4 flour tortillas

  • ½ cup hummus

  • 1 cup shredded mozzarella or cheddar cheese

  • ½ cup sliced bell peppers

  • ½ cup sliced mushrooms

  • ¼ cup chopped red onion

  • ½ cup fresh spinach

  • 1 tablespoon olive oil

  • ½ teaspoon garlic powder

  • ¼ teaspoon black pepper

  • Optional: chili flakes or avocado slices

Notes

  • Heat olive oil in a skillet over medium heat.

  • Add bell peppers, mushrooms, and onion. Cook for 3–4 minutes until slightly softened.

  • Stir in spinach and cook for another minute until wilted.

  • Remove vegetables from the pan and set aside.

  • Spread hummus evenly over one tortilla.

  • Add a layer of sautéed vegetables and sprinkle shredded cheese on top.

  • Place another tortilla on top to form a sandwich.

  • Cook the quesadilla in the skillet for 2–3 minutes per side until golden brown and crispy.

  • Remove from the pan and let it rest for 1 minute.

  • Slice into wedges and serve warm.
