4 flour tortillas

½ cup hummus

1 cup shredded mozzarella or cheddar cheese

½ cup sliced bell peppers

½ cup sliced mushrooms

¼ cup chopped red onion

½ cup fresh spinach

1 tablespoon olive oil

½ teaspoon garlic powder

¼ teaspoon black pepper

Optional: chili flakes or avocado slices

Heat olive oil in a skillet over medium heat.

Add bell peppers, mushrooms, and onion. Cook for 3–4 minutes until slightly softened.

Stir in spinach and cook for another minute until wilted.

Remove vegetables from the pan and set aside.

Spread hummus evenly over one tortilla.

Add a layer of sautéed vegetables and sprinkle shredded cheese on top.

Place another tortilla on top to form a sandwich.
