This quick and easy fried egg sandwich recipe features crispy buttered toast, a perfectly cooked egg with a runny or set yolk, and optional melty cheese. Perfect for breakfast, brunch, or a light dinner.

Ingredients

  • 2 slices sandwich bread

  • 12 large eggs

  • 1 tablespoon butter

  • Salt, to taste

  • Black pepper, to taste

  • 1 slice cheese (optional)

  • Optional toppings: bacon, avocado, tomato, hot sauce

Instructions

  • Heat a non-stick skillet over medium heat.

  • Add half the butter and toast one side of each bread slice until golden. Remove and set aside.

  • Add remaining butter to the skillet.

  • Crack the egg into the pan. Cook 2–3 minutes for sunny-side up.

  • Season with salt and pepper.

  • For over-easy eggs, gently flip and cook another 30–60 seconds.

  • If adding cheese, place it on the egg during the last minute and cover with a lid to melt.

  • Place the egg on one slice of toast (toasted side inward).

  • Add desired toppings.

  • Top with the second slice of bread. Slice and serve immediately.

Notes

  • Use medium heat to avoid rubbery egg whites.

  • For a fully cooked yolk, extend cook time by 1–2 minutes.

  • Lightly press the sandwich before slicing to prevent slipping.
