Ingredients:

  • 1/3 cup honey
  • 2 tbsp lemon juice
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tsp red pepper flakes
  • 3 tbsp. extra-virgin olive oil, divided
  • Four 6-oz. salmon fillets
  • Kosher salt as per your taste
  • Freshly ground black pepper as per your taste
  • One lemon, sliced
  • Freshly chopped parsley, for garnish

 Instructions

  • Whisk together honey, lemon juice, soy sauce, and red pepper flakes in a medium bowl.
  • In a large skillet, heat two tbsp oil on medium-high heat.
  • When the oil gets hot though not smoking, add salmon by keeping the skin-side up.
  • Add salt and pepper on the salmon and cook for around 6 minutes until deeply golden.
  • After that flip over the fillets and sprinkle over the remaining tablespoon of oil.
  • Further, add garlic to another skillet and cook until aroma arises.
  • Then pour the honey mixture into it.
  • Add sliced lemons in the honey mixture skillet and cook until sauce is reduced to around one-third.
  • Then season salmon with the honey sauce.
  • Garnish with parsley and sliced lemon to serve.

2. Mexican Rice

Ingredients:

  • 2 peeled and diced carrots
  • One small diced green bell pepper
  • One small chopped onion
  • 3 cloves thinly sliced garlic
  • 2 cups long grain rice, rinsed
  • 1 tbsp. tomato puree
  • 2 1/2 cups chicken broth
  • 1 can fire roasted diced tomatoes
  • 1/2 tsp. dried oregano
  • 3/4 tsp. ground cumin
  • One can tomato sauce
  • 3 tbsp. extra-virgin olive oil
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 1/4 cup cilantro, finely chopped

Instructions

  • Heat oil in a large skillet on medium-high heat.
  • Add onion, carrots, bell pepper, and garlic, and cook for about 5 minutes, stirring constantly.
  • When onions get translucent add rice and tomato paste and cook, mixing continuously for 2 to 3 minutes.
  • Stir in chicken broth, tomato sauce, diced tomatoes, and season with oregano, cumin, salt, and pepper. Bring the mixture to a boil.
  • Then put the lid and reduce heat to low.
  • Simmer till rice is adequately cooked and liquid is totally absorbed. Don’t forget to stir occasionally. This process can take around 17 minutes.
  • Garnish with cilantro and serve.

3. Italian Flavored Steak

Ingredients:

  • 1 tbsp dried oregano
  • 3 cloves garlic, minced
  • 2 tbsp honey
  • 1 tbsp dried thyme
  • 3/4 cup balsamic vinegar
  • 2 tbsp extra-virgin olive oil
  • 4 large pieces of sirloin steak
  • 2 sliced beefsteak tomatoes
  • 4 slices mozzarella
  • kosher salt as per taste
  • Fresh basil leaves, for garnishing

 Instructions

  • Whisk together garlic, honey, olive oil, balsamic vinegar, dried thyme, and oregano in a small bowl.
  • Pour the mixture over steak and let it marinate for 20 minutes.
  • Meantime season the tomatoes with salt and pepper which you can add according to your taste.
  • On a high flame griddle, grill steak on each side for around 4 to 5 minutes.
  • Further, top the steaks with tomatoes and mozzarella then cover grill to cook for about 2 minutes. Grill till the cheese is melty.
  • Garnish with basil and enjoy your one of the easy meals.
