  • ¼ cup red onion, finely diced
  • 1 jalapeño, seeded and finely diced (or more for extra heat)
  • ¼ cup fresh cilantro, roughly chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lime juice (about 1 large lime)
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon ground cumin
  • 1 teaspoon olive oil (optional, adds silkiness)
  • Pinch of sugar (optional, enhances sweetness)

Instructions

Step 1 — Prep Your Cherry Tomatoes Quarter your cherry tomatoes and place them in a medium mixing bowl. If your tomatoes are very juicy, you can gently squeeze out a bit of excess liquid before adding them to the bowl to prevent a watery salsa.

Step 2 — Dice the Aromatics Finely dice the red onion and jalapeño. The finer your dice, the better — you want every chip scoop to have a balanced bite of everything. Mince your garlic cloves as finely as possible.

Step 3 — Add Cilantro and Lime Roughly chop the fresh cilantro leaves (stems are fine too, they’re flavorful!) and add to the bowl. Squeeze fresh lime juice directly over the ingredients.

Step 4 — Season and Toss Add salt, cumin, and olive oil if using. Gently toss everything together until well combined. Taste and adjust — more lime for brightness, more salt for depth, more jalapeño for heat.

Step 5 — Rest and Serve For best results, let the salsa sit at room temperature for at least 10 minutes before serving. This allows the flavors to meld and intensify. Serve with tortilla chips, over tacos, or however your heart desires!

Notes

  • For a chunkier salsa, dice everything larger. For a more saucy consistency, pulse briefly in a food processor.
  • Always taste before serving and adjust salt and lime to preference.
  • The salsa will release liquid as it sits — this is normal and actually makes it more flavorful. Just give it a stir before serving.
