- 1 cup shredded cheddar or Mexican blend cheese
- ½ cup diced onion
- 1 tsp cumin
- ½ tsp garlic powder
- ½ tsp smoked paprika
- Salt and pepper to taste
- Optional toppings: salsa, sour cream, avocado, lettuce, tomato, cilantro
Instructions
- Heat a skillet over medium heat.
- Add diced onions and sauté for 2–3 minutes until softened.
- Stir in black beans and season with cumin, garlic powder, smoked paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Warm tortillas in a separate skillet or microwave.
- Fill each tortilla with bean mixture and top with shredded cheese.
- Cover briefly to melt the cheese, about 1–2 minutes.
- Add optional toppings as desired.
- Serve immediately and enjoy.

- Use canned beans for quick prep or homemade beans for deeper flavor.
- Adjust seasoning to taste.
