Some vegetarian dishes are great soul food. Even if you are non-vegetarian, you will love to indulge in some of the easy vegetarian recipes. These recipes take less time to cook and yet full of flavors. Here are some of my favorite vegetarian recipes-

1. Classic American Coleslaw

It is America’s one of the favorite vegetarian dish. A dish you can enjoy during the summer cookout or barbeque. The light and easy to make recipe is good for your health as it is gluten-free.

Cooking Time: 5 minutes

Ingredients:

– Green cabbage, 4 cups
– Red cabbage, 2 cups
– Shredded carrots, 1 cup
– Soy, 1 cup
– White vinegar, 2 tablespoons
– Granulated sugar, 2 teaspoons
– Black pepper, a ½ teaspoon

Directions:

• Take a bowl. Combine shredded veggies, vinegar, sweetener, mayo, and pepper.

• Mix all the ingredients properly. Put it in a fridge.

• Let it chill before you serve.

For summer days, it feels great to chill with your friends and family outdoor. It adds taste when you put up a summer BBQ or cookout in your backyards. This classic vegan recipe is a perfect side dish for its creamy delight.

Cooking Time: 10 minutes

Ingredients:

– Elbow Macaroni, gluten free, 8 ounces
– Red bell pepper, 1 cup
– Chopped celery, 1 cup
– Carrots, 1 cup
– Diced red onion, 1/2 cup
– Soy-Free mayo, 1 cup
– White vinegar, 1 tablespoon
– Dijon mustard, 2 teaspoon
– Black pepper, a ½ teaspoon

Directions:

• Firstly cook elbow macaroni for 8-10 minutes in a pan of water. Drain the water and let it cool.

• Take chopped veggies, boiled macaroni, and all other ingredients.

• Stir all the ingredients for mixing well. So that everything gets thoroughly coated.

• Serve it chilled.

3. Blueberry Pancake

Who doesn’t love fluffy pancakes? I love pancakes a lot and every week for at least 2 days we eat pancakes at breakfast in my house. Blueberry pancakes among the others are my favorite and I can’t wait to share the recipe with you.

Cooking time: 14 minutes

Ingredients:

– Eggs, 2
– Baking powder, 11 ml
– Flour, 180 grams
– Milk, 240 ml
– Melted sugar, 38 gm
– Some knobs of butter
– Salt, 3.75 ml
– Blueberries, 150 gm
– Maple syrup

Directions:

• In a bowl add the all-purpose flour, baking powder, and some salt. Mix the ingredients properly.

• Beat eggs and milk in a separate medium bowl. In the center of the bowl with mixed dry ingredient pour the egg-milk mixture. Whisk all the ingredients together to have a smooth batter.

• Add little melted butter into the mixture. Pour most of the blueberries into the batter.

• Heat a pan adding a butter knob in it. Now drop a tablespoonful of pancake batter for each pancake on the pan and make pancakes. If your pan is big, you can make more than 1 pancake at a time.

• Cook each one for around 3 minutes at medium heat until bubbles start to appear over the surface. After that turn each pancake and cook for 2-3 minutes more until it turns golden.

• Serve the pancakes with maple syrup and some blueberries.
